The character of a traditional shoyu is shaped not only by its ingredients, but by the vessel, the environment, the microorganisms and the patience behind it.
Traditional wooden kioke barrels create an environment that has been part of Japanese fermentation culture for generations.
Long fermentation allows flavour, aroma and depth to develop gradually.
